Oh-so-cheesy chicken broccoli pasta

Fancy a quick and easy 30 minute recipe? Darragh @belfast-undercover-chef has got you sorted with his cheesy chicken and broccoli pasta. Guaranteed to please and cooked all in the one pan for hassle free and oh-so-tasty comfort food.

1) Heat the olive oil in a large pan. Add the chicken and season them with Salt & Pepper. Cook for about 5 minutes until the chicken is cooked through and starts to brown.

2) Add the dromona butter, onions and garlic and cook for another 2 minutes until the onions softens a little bit.

3) Add the pasta, chicken stock, milk and bring to a boil. Turn the heat down to low, stir, cover and simmer for 15 minutes, stirring occasionally, until the pasta cooks through.

4) Uncover the pan and stir in the broccoli. Continue cooking for a couple more minutes until all the liquid evaporates.

5) Stir in the dromona cheddar cheese. Add a sprinkle of cheese to the top and place under the grill until bubbling.

  • 1 tbsp olive oil
  • Knob of dromona butter
  • 2 large chicken breasts, diced
  • 1 onion, sliced
  • 4 cloves garlic minced
  • 200g pasta such as penne, shells, rigatoni etc
  • 250ml chicken stock
  • 450ml milk
  • 1 head of broccoli, cut into small florets
  • 230g dromona grated cheddar cheese
