Darragh’s Cowboy Butter

Melt the butter in a pan and whisk in paprika, cayenne, mustard, lemon zest and garlic until thickened.

Stir in the rest of the ingredients and season.

The butter should turn out nice and soft once it’s cooled.

100g Dromona Butter

1 tsp paprika

1/2 tsp cayenne pepper

1 tsp dijon mustard 

1 zest of lemon

4 garlic cloves, crushed

Handful fresh parsley, chopped

1 tsp chilli flakes

1/2 lemon juice

Small bunch of chives, chopped

Small bunch of thyme, leaves only
