Comforting rice pudding with winter fruits

Serves: 4 PEOPLE


Preparation time: 10 MINS

Cook time: 30 MINS

For the rice pudding, place all of the ingredients into a saucepan and bring to a boil

Reduce to simmer over a low heat for 25 minutes, stirring occasionally

While the rice pudding is cooking, toss all of the fruits in maple syrup or honey until well glazed

Let these caramelise in the pot then place on top of the rice pudding

Serve and enjoy!

For the rice pudding

110g short grain pudding rice

650ml dale farm whole milk

3 tbsp honey

1 vanilla pod (optional)

For the winter fruits

2 tbsp dried apricots

2 tbsp dried prunes

1 ripe pear (peeled & quartered)

1 fig (quartered)

2 tbsp maple syrup or honey
