Sloppy Joe

Begin by making the Sloppy Joe or cheat by using left over Bolognese sauce.

Gently heat the oil in a large frying pan, add the beef, cook until browned. Once browned remove and place in a separate dish.

Add the onions and garlic to the frying pan and gently cook until softened.

Next add the tinned tomatoes and stock with a dash or two of Worcestershire sauce return the minced beef to the pan. Stir everything together and simmer for 10-15 minutes or until slightly thickened. Although it is called sloppy it should not be too wet. If using immediately keep warm, if not refrigerate until needed.

Slice the bread rolls in half, lightly butter the insides and place butter side down in a deep sided frying pan over a medium heat and toast until golden brown.

In a separate small frying pan add a 1 tablespoon of butter and add the spinach. Cook over a gentle heat until just wilted

To assemble divide the spinach between the two rolls, top with a generous amount of hot Sloppy Joe, topped with plenty of grated cheese, close and DEVOUR!

2 Ciabatta or sub rolls

Dromona butter, softened

Small bag of spinach

150g Dromona Medium cheddar, grated

500g lean ground minced beef

1 small onion, finely chopped

2 garlic cloves, crushed

1 tin chopped tomatoes

1 beef stock cube, dissolved in a little hot water

1-2 tablespoons olive oil

Worcestershire sauce

Salt and black pepper
