Wholewheat cinnamon pancakes with blueberries and honey

Place plain and wholewheat flour, baking powder, cinnamon powder and salt in a large mixing bowl.

In another bowl, whisk the egg with dale farm buttermilk, honey, syrup and cottage cheese.

Carefully add the wet to the dry ingredients, not beating to hard (but until lump free).

Heat a non-stick pan, add butter and cook a spoonful of the batter for 2 minutes on each side.

Serve with blueberries, honey and crème fraiche.

100g plain flour
100g wholewheat flour
1 tbsp honey
1/2 tsp ground cinnamon powered
1 tbsp baking powder
50g cottage cheese
250ml dale farm buttermilk
Pinch of sea salt
1 large free-range egg
1 tsp vanilla syrup
