Mini Baked Chocolate Cheesecakes with Praline

Cook time: 20-25 MINS

Line the base of your muffin tins with Madeira cake.

In a bowl, mix the sugar, cornflour and egg well.

Add in the cream cheese slowly and vanilla syrup.

Gently melt the chocolate in a microwave and leave to cool slightly. Once cooled, whisk into the cheese mixture.

Pour over the sponge bases and bake until set at 170c for 20-25 minutes.

Bash mini eggs with a rolling pin until it’s crushed up.

Leave cheese to cool and serve with the mini eggs and whipped cream.

75g caster sugar

225g cream cheese

1 free range egg (small)

75g milk chocolate or dark

100ml dale farm double cream

1 tsp vanilla syrup

2 tsp cornflour

1/2 Madeira cake (cut into rounds)
