1. Firstly, prepare the lemon syrup by combining the lemon juice, sugar and water, Place over a gentle heat in a small pot, don't stir until the liquid begins to turn clear.

2. Stir and ensure the sugar is dissolved.

3. Refrigerate for 3 hours.

4. Once the syrup is cooled, add the syrup to the ice cubes in a blender and break up the lollies (removing the stick) into the blender.

5. Add the mint leaves and blend until smooth. Depending on the size of the ice cubes, you may need to slightly adjust the amount of cold water to achieve pourable consistency.

6. Top with lemonade and garnish with a mint leaf.
