Darragh's Salted Caramel Skillet Cookie

Cook time: 20-25 minutes

A Gooey Caramel Cookie with Chocolate Chips and a Caramel Centre – Perfect served with some Vanilla Ice Cream!

1. Preheat your oven to 160 degrees and lightly grease your skillet.

2. Whisk together the Plain Flour, Bicarbonate of Soda, Salt and Cornflour together in a bowl and leave to the side for now.

3. Melt the Butter till liquid, and add to a bowl. Add in the Brown Sugar and Sugar and whisk the mixture together for 3 minutes.

4. Add in the Egg and Vanilla and whisk again till they’re combined.

5. Add in the mixed together Dry Ingredients and mix until a really thick cookie dough is formed.

6. Add in the chocolate chips and beat in again.

7. Spread half of the cookie dough onto the bottom of the skillet.

8. Spread the caramel over the top of the cookie. Add the second half of the cookie on top.

9. Bake in the oven for 20-25 minutes.

10. Once baked, leave to cool for 10-20 to cool slightly, and then serve with ice cream.

  • 275 g Plain Flour
  • 1 tsp Bicarbonate of Soda
  • 1/2 tsp Sea Salt
  • 1 tbsp Cornflour
  • 115g Dromona Butter
  • 55 g Sugar
  • 135 g Light Brown Sugar
  • 1 medium Egg
  • 1 tsp Vanilla
  • 250 g Chocolate Chips
  • 200 g Caramel (shop bought or homemade)
