1. Firstly, make the sugar syrup by combining the water and demerara sugar in a small pot over a gentle heat.
2. Allow to simmer gently until the liquid becomes clear before stirring and bottling to chill immediately.
3. Once chilled, place all the ingredients in a blender and blend until smooth.
4. Serve chilled over ice with a wedge of pineapple garnish.
