Buttery Festive Spiced Shortbread

This isn’t just your typical store-bought shortbread at Christmas. Rachael brings us this lovely spiced shortbread, perfectly delectable with a hot drink on those cold Christmas nights!

1. Brown the butter – cook the butter over a medium heat until brown and smelling nutty. Leave until cold.

2. The butter will have lost a little weight in the browning process so top it back up to 100g with fresh cold butter.

3. Put butter, sugar and flour into a bowl and mix until breadcrumb consistency.

4. Add milk a tbsp at a time until it forms a dough. Wrap in cling film and chill for an hour.

5. Roll out dough to 1cm thick and cut using different Christmas shapes.

6. Place dough shapes on a lined baking tray, prick with a fork and bake for 15 mins until slightly golden.

7. Mix the spice mix and remaining caster sugar and scatter over the shortbread and leave to cool.

For the shortbread:

  • 150g plain flour, plus extra for dusting
  • 100g Dromona Butter, browned and left until cool
  • 50g caster sugar, plus 2 tbsp for sprinkling
  • ¼ tsp festive spice mix
  • ⅔ tbsp whole milk

For the festive spice mix:

  • 4 tsp ground cinnamon
  • 1 tsp ground coriander
  • 2 tsp ground nutmeg
  • 2 tsp ground ginger
  • ½ tsp ground cloves
