Darragh's Christmas Butters

The perfect festive addition to any Christmas table or dish. Whether you prefer savoury or sweet – Dromona, with the helping hand of Darragh, have you covered!

1. For each butter, mix together ingredients in a large mixing bowl.

2. Place the mixture on a sheet of parchment paper.

3. Roll the parchment paper up tightly and twist both ends so it begins to look like a Christmas cracker.

4. Voila! This is ready to use or if you’re prepping ahead of the game, store in the fridge or freeze until ready to use.

Savoury Butter

  • 500g Dromona butter
  • 125g dried cranberries
  • 30g each of fresh thyme, rosemary and sage
  • Zest of an orange
  • Salt & pepper to taste

Brandy Butter

  • 500g Dromona butter
  • 125g cranberries
  • 2 clementine’s
  • 1 tbsp brandy
  • 2 tsp mixed spice
