The best of all breakfast flavours wrapped up in a warm tortilla! Filling and flavourful – the perfect way to start any day.

1. Prepare all ingredients first as this dish comes together very quickly. Slice chorizo in half and dice, finely chop parsley, scoop avocado using spoon and slice into fine slices, crack four eggs into a bowl, season and whisk and finally grate your cheese or for convenience buy Dromona grated cheddar

2. Warm tortillas in a hot frying pan for 30 seconds on each side – place in foil to keep warm

3. Add chorizo to the frying pan and cook on medium heat for 4-5 minutes. Oil will be released which you’ll want to keep

4. In a small pot on medium heat add your butter, allowing it to melt before adding in the whisked eggs. Cook on low to medium heat for 4 minutes, gentle stir with a spatula every 30 seconds

5. Remove chorizo and eggs from heat

6. Build your breakfast taco! Tortilla, spreading across the Ballymaloe relish, adding scrambled egg, sprinkle with grated Dromona cheese, adding the avocado slices, topping with chorizo, drizzling some of the chorizo oil and finally, adding your chopped parsley

7. Serve up and enjoy!

  • 2 tortillas
  • 60g of chorizo
  • 4 eggs
  • 2 tbsp of Ballymaloe original relish
  • 1 tbsp Dromona Butter
  • 30g Dromona cheddar
  • 1/2 avocado
  • Fresh parsley
