Creamy Tomato Soup With Cheesy Soda Bread @Smoke_Shack_NI

Cook time: 30 minutes

Super simple and super tasty, this tomato soup and oh-so-cheesy soda is the perfect comforting combination for any cold day.

You will need a large pot and a blender.

For the soup

1. Firstly make the soup by heating the oil in a medium sized pot until hot. Add the onion and garlic and sweat for 3-4 minutes until softened but not coloured.

2. Add the thyme, tomatoes & stock and allow to simmer for 15 minutes until the tomatoes become sweet.

3. Blend all ingredients together until consistency is smooth.

4. Season to taste before adding the cream.

For the Cheesy Soda

1. Cut the soda bread and toast under a hot grill until nicely browned.

2. Butter lightly and top with the cheese and Worcestershire sauce.

3. Grill until nicely caramelised.

4. Serve with a bowl of hot soup & enjoy!

For the cheesy soda bread:

  • 1 large soda bread
  • 1 tbsp Dromona butter
  • 1 tbsp Worcestershire sauce
  • 40g grated Dromona Mature Cheddar

For the soup:

  • 1 large can chopped tomatoes
  • 3 tbsp tomato paste
  • 3 cloves garlic chopped roughly
  • 1 medium white onion, chopped roughly
  • 1/2 tbsp fresh thyme
  • 200ml vegetable stock
  • 50ml single cream
  • Sea salt & pepper to taste
  • 25ml extra virgin olive oil
