Perfect for those cold winter days this recipe is the ultimate comfort food thanks to Colm @daly_foodie. Slow cooker and no hassle chicken and vegetable soup, made perfect served with a ham and cheese toastie!
You will need a slow cooker and a pan.
For the soup
1. Add all the ingredients for the soup to a slow cooker and cook on high for 3 hours, ensuring your chicken is fully cooked.
2. Remove the chicken breasts & shred using two forks in a bowl.
3. Blend the soup to a consistency you’re happy with. Return the chicken to the soup and mix.
4. Season with salt and pepper to taste.
For the toastie
1. Thickly slice your sourdough & butter generously. Top with the ham & cheese ensuring the outsides aren’t missed, sandwich the bread together and press down firmly.
2. Place in a medium heat non-stick pan for 2-3 mins then flip over. At this stage place a small baking tray on top of the sandwich & top with a heavy weight like a tin of beans For another 2-3 minutes.
3. Remove from the heat, slice & enjoy with your hearty soup!
